How do you make Perfect pancakes?

when I make pancakes I always use to much batter and it turns out wrong.I guess I want BIG fluffy pancakes(that covered the plates) like my grandma use to make. coerce she used a hugh cast iron skillet with two handles that weighed a ton and took a hour to heat up and cool down.My sister got it now so I'm out of luck.so how do you make those types of cakes.Can I just bake them in the oven or does that mean their no longer pancakes?How about regular pancakes?How do you judge how much batter to use and when to flip it?
